Coconut Granola Cookies Recipe

Makes: 9–12 cookies

Bake Time: 20–25 mins

Ingredients:

  • 2 cups iWell's Coconut Granola (with oats, nuts, seeds, and coconut flakes)

  • 1/3 cup maple syrup or honey

  • 1 tbsp chia seeds (optional, for added texture and nutrition)

  • 1/4 cup raisins, cranberries, or dark chocolate chips (optional for variety)

  • Pinch of salt

Note: No need to add oil, oats, or seeds separately as they're already in the granola mix.


Directions:

  1. Preheat your oven to 350°F (180°C). Line a baking tray with parchment paper.

  2. In a mixing bowl, combine the Coconut Granola, maple syrup, chia seeds (if using), and raisins or chocolate chips. Mix well until everything is evenly coated.

  3. To shape the cookies:

    • Use a cookie cutter or a round ring on the tray.

    • Spoon 2–3 tablespoons of the mixture into the ring and press firmly with the back of a spoon to form a compact cookie.

  4. Bake for 20–25 minutes or until golden brown. Keep an eye during the last few minutes as baking time may vary.

  5. Optional method to prevent spreading: After shaping, cover the cookies with aluminum muffin cups while baking. Remove the cups for the last 5 minutes to allow browning.

  6. Cool completely before serving. They will firm up as they cool.
